Fluffy Frosting

  • 1.5 c granulated sugar
  • 1/2 c water
  • pinch of salt
  • 1/4 tsp cream of tartar
  • 4 egg whites
  • 1 tsp vanilla

Combine first four ingredients in sauce pan.  Stir over low heat until sugar is dissolved.  Cook without stirring to 260 deg or until a little bit of mixture dropped in cold water forms a hard ball.  Using a beater, beat whites until they peak when beater is raised.  Now add syrup gradually to beaten whites while beating.  When all syrup is added, frosting should be ready to spread.  Add vanilla.  this frosting mounds and remains soft with no crusting.
