Prasopita

  • 5-7 leeks cleaned and cut
  • 4 eggs
  • 1 1.2 tsp salt
  • feta crumbled (optional)
  • phyllo

Prepare phyllo and put down the first 5 layers.  Combine leeks, egg, salt and feta (f desired) and spread filling over pita.  Top with remaining 4 layers.  Vent top to allow steam to escape while baking.  Bake about 1 hr at 350.
