  • 1 package phyllo defrosted
  • 6 eggs
  • 8 oz cup greek yogurt (1 container)
  • 1 cup corn oil
  • 2 tsp baking powder
  • +/- 1.5 lbs feta crumbled

Spray 9×13 pyrex dish. Open phyllo.  Take one sheet and lay it flat.  Sprinkle crumbled feta on it then wrinkle it up accordian style lengthwise and place in pan.  Continue until pan is full. Pack them in, but not super tight.

Combine eggs, oil, yogurt, baking powder in a bowl and beat well with a whisk.  Pour egg mixture over phyllo allowing it to soak down into folds of phyllo.  Let it sit for 20 minutes and then bake for approx 35 minutes at 350 until top is beginning to turn golden brown and egg is set.
