Bird’s nest cookies

  • 1/2 cup packed brown sugar
  • 1 cup butter softened
  • 1 tsp vanilla
  • 2 separated egg
  • 2 cup flour
  • 1/2 tsp salt
  • 1 1/2 cup pecans finely chopped
  • 1 jar tart jelly (current, red raspberry are great)

Beat butter add sugar, egg yolks, vanilla.  Stir in flour and salt. Form into small balls, dip into egg white and roll in pecans to cover.  Place on baking sheet and press center with thumb.  Bake ~15 min at 350 until done.  When hot spoon a bit of jelly into center.  Yum!!!
